Candy makers please help?

That's a thoughtful gift. Just be sure when you make the brittle, to do it on a day when it's not humid. Store in in a tin with a tight lid. Use a thick pan, bring the candy to 250 degrees and add peanuts. Keep stirring because it's important you don't burn or scorch the candy. When it reaches 290 degrees, pull the pan off the heat asap. It's nrmally 300 degrees but to be on the safe side, I pull the pan away 10 degrees early just in case. You don't want the mixture to reach over 300. It won't have that good brittle texture. When you pour it out, make sure the surface of where ever your pouring the brittle out on is well ered or sprayed with cooking spray.
