In my fancy goldfish tank?

i am changing the sand substrate to pebble gravel due to that the sand is to messy and gets the filter messed up.while i do this transactions and put the 2 fish in like a bowl or something will they die cause they will make water dirty and it has no filter. it will prob take me about 20 mins top to do this?need help.
