How come the new covenant did away with only some of the laws from the old covenant?

Seems like people picked and chose what laws from the old covenant to abolish on their own. Like wearing cotton and wool at the same time, you couldn't do that in the old covenant but you could in the new. But yet laws like being gay stayed the same. Seems like people just changed christianity to suit their needs.
