Why is a contractile vacuole often more difficult to see than a food vacuole in an amoeba?

Contractile vacuoles mainly are filled with water and water soluble wastes. Food vacuoles will have physical particles inside the vacuole. You can make the contractile vacuole visible with specific dyes that will be filtered out by the vacuole.
